動物園對民眾而言是，休閒的首選場域之一，但遊客在遊憩的情況下能吸收園方提供的保育資訊嗎？學習是相當個人化的建構、組織過程，過去動物園的遊客研究常用結構式問卷瞭解學習成效，卻未探討學習情境因素的影響。本研究探討一般遊客在臺北市立動物園臺灣動物區對臺灣野生動物認知、保育態度、環境行動經驗（意圖）的變化，另外採自由選擇學習的理論，探討影響遊客認知變化的因素。其中，認知部分主要藉由目標概念詞彙「臺灣野生動物」讓研究參與者繪製個人意涵構圖。保育態度及環境行動經驗（意圖）則採半結構自評問卷以及訪談，進行調查。並搭配以學習情境模型發展而成的題目瞭解影響學習之因素。 研究結果顯示多數參與者在參觀前已相當重

青梅加工品抗代謝症候群功能及其保健產品開發-以人體試食試驗評估梅精複方輔助調節血壓之研究

代謝症候群是台灣嚴重的健康問題，其與國人十大死因之糖尿病、高血壓與心臟病等息息相關，若不加以預防與治療可能會引起許多慢性併發症。高血壓的盛行率會隨著年齡之增長而增加，根據統計，台灣兩千三百萬人中，約有24%的人患有高血壓，尤其是60歲以上的年長者，每兩人中就有一人患有高血壓，因而導致每六人就有一人會發生中風，治療高血壓方式除了生活型態改變外，最直接方式為藥物治療，即便高血壓藥物已經發展出許多標準療程，但也出現許多副作用，使得民眾不樂於接受藥物治療。所以本研究希望透過其他方式來改善高血壓。根據先前文獻指出，青梅具有降低血脂、體脂肪及血糖之功能，由於傳統梅精在製作過程中需經長時間加熱，造成梅果實
中所含機能性成分被破壞，因而降低其有益功能與價值性。因此研究使用之梅精是配合減壓濃縮方式，減少加熱溫度及時間製成之新型梅精為基礎，外加不同比例青梅果實、黑蒜和仙草萃取物製成梅精複方，透過加強其機能性成分如綠原酸 (chlorogenic acid)、咖啡酸 (caffeic acid)、p-香豆酸 (p-coumaric acid) 等，開發出新穎性梅精複方，並以抗代謝症候群為訴求，先前本研究室已釐清並透過不易形成體脂肪、降血脂和調節血糖之實驗篩選出具潛力之樣品，梅精複方-4號 (Mei-Gin Formula-4, MGF-4) 及梅精複方-7號 (Mei-Gin Formula-7, MG
F-7)，然而，目前尚未進行梅精複方對血壓影響之臨床試驗，來完成此複方在抗代謝症候群之作用。因此，本研究透過隨機、單盲、介入型人體試食試驗，評估梅精複方對於血壓的影響和安全性。招募50位患有高血壓 (收縮壓介於130-179 mmHg或舒張壓介於85-109 mmHg)，未服用高血壓藥物受試者，將其隨機分配到梅精複方-4號或梅精複方-7號之組別，實驗時間為期八週，每日食用梅精複方-4號或梅精複方-7號4顆，最後共44人完成試驗。由實驗結果得知，在MGF-4介入第4及8週之收縮壓 (Systolic blood pressure, SBP) 及舒張壓 (Diastolic blood press
