隨著新時代的飲食習慣改變與環境保護議題被更多人重視,吃蔬食的人口已逐漸改變,從主流的民間宗教信仰逐漸轉變成多元因素,吃蔬食已經成為一種養身、愛護地球、潮流的化身,越來越多人加入蔬食的行列,隨著吃蔬食人的增加,蔬食餐廳也日益增多,但是卻有不少餐廳因為某些因素導致餐廳經營不順,最後歇業收場,因此如何正確的經營一間蔬食餐廳,以及成功的蔬食餐廳應該具備哪些因素,成了一個很重要影響關鍵。本研究在探討宜蘭蔬食餐廳的關鍵成功因素,首先透過文獻蒐集,蒐集相關的文獻初步擬定其構面與評估準則,接著運用修正式德菲法,彙整聚攏專家、學者意見,找出蔬食餐廳的關鍵成功因素構面與評估準則,並進一步建構層級分析架構,接著使

用層級分析法(AHP)進行問卷調查,調查宜蘭的蔬食餐廳消費者對於蔬食餐廳的關鍵成功因素看法,針對各評估準則進行權重分析,建構出宜蘭蔬食餐廳的關鍵成功因素的權重體系。本研究結果得知,宜蘭蔬食餐廳的關鍵成功因素之主要構面權重依序為:先決條件、行銷方式、供給餐點、顧客感受。以評估準則權重前五來看依序為:「經營者」、「資本額」、「廣告」、「餐廳地點」、「餐點種類」。本研究結果可提供給宜蘭蔬食餐廳業者做為參考,亦可作為宜蘭蔬食餐廳創業者做為參考,制定蔬食餐廳的經營、管理方法。
